Shredded BBQ Tofu Wrap

These colourful wraps are packed with the perfect balance of textures and flavours: the tofu gets grated, providing a unique bite. Then, it gets cooked with smoked paprika and BBQ sauce, making it the perfect addition to the crisp cabbage and sweet corn. Ingredients

Wraps

  • 16 oz (450 g)
    firm tofu, pressed
  • 1 Tbsp (15 mL)
    vegetable oil
  • 4
    cloves garlic, crushed
  • ⅓ cup (67 g)
    uncooked white rice
  • 1
    stalk green onion, sliced (optional)
  • 1½ cups (105 g)
    shredded red cabbage
  • 4
    large soft tortillas
  • ½ cup (82 g)
    canned corn
  • 1½ cups (45 g)
    fresh spinach, chopped
  • ⅓ cup (80 mL)
    barbecue sauce

Chipotle mayo

Directions

  1. Cook the rice according to the package instructions. When done, fluff and set it aside.
  2. Next, grate the tofu into large shreds.
  3. Heat the oil in a sauté pan over medium-high heat and add the tofu, garlic, and smoked paprika. Cook for 4 - 5 minutes.
  4. Then add the BBQ sauce. Cook for another 1 - 2 minutes and take it off the heat.
  5. Assemble the wraps with cooked rice in the middle, then topping it with the tofu, spinach, cabbage, corn, and green onion.
  6. Wrap it up and toast it in a grill pan if desired.
  7. Mix the sauce in a small bowl and serve it along with the wraps. Enjoy!

Shredded tofu has been a game changer for me. My non-vegan husband requests this meal on repeat. It’s nice for the times you want a meal that’s light but still filling. Delicious!

Hi Suzie! We tend to find it in the international food aisle or near other jarred goods in case it helps. You can omit the chipotle adobo sauce if it's not accessible. Alternatively, you can substitute it for a hot sauce of your choosing, such as Tabasco 😃

Sooo yummy! I made this as a super-quick lunch at my lunchbreak when working from home. To speed things up a little, I pressed the tofu for several hours to get rid of the moisture and then I skipped the frying. I didn't have red cabbage at home, so I used shredded carrot instead and it worked perfectly. 😊
